When you think of Iowa, you probably picture corn, hogs, and other crops, but one farm is doing things a little differently. Today, we're learning about an Ames-born farmer who's changing how we view food in the West.
Shelby Smith, the founder of this niche market, initially embarked on a career in banking. However, despite her success in finance, she couldn't ignore the pull of her agricultural roots. Growing up on a farm, Shelby had always felt a deep connection to the land and the lifestyle that came with it. Eventually, that connection led her to make a bold decision: to leave the banking world behind and return to farming. She joined forces with her dad, working alongside him on their family farm. It was through this experience that Shelby's father inspired her to explore a unique and innovative market in the agricultural industry, one that would set her apart and allow her to bring fresh, new ideas to the table. Yep, it's crickets! Personally I think grass hopers and crickets are cool, but I'd prefer not to eat them.
Shelby, the founder of Gym 'N' Eat Crickets, utilizes these high-protein insects to create a variety of products, from protein bars to pizzas. Often referred to as the "prairie lobster," crickets are packed with an incredible amount of nutrients. Shelby developed a cricket powder that can be sprinkled on salads, blended into smoothies, or used in virtually any dish you like.
Fun fact just two tablespoons of this powder pack an impressive eight grams of protein. The name Gym 'N' Eat Crickets holds a personal significance for Shelby, as she is a weightlifter and has hosted several competitions at her farm near Ames.
